For most of last year, Thursday was my worst night. Long day, kids fed, and by 7 PM I had zero patience for a recipe with more than four steps. So I’d open a delivery app and tell myself I’d “make it work” in my log. At 232 pounds, that was how I lived. Now I’m at 208, and Thursday is one of the nights I’m proudest of, because of a bag of frozen shrimp.
Quick note before I go on: I’m Jason, I built ZeroToHero (zerotoherofit.com), and I log my own meals in it. So I’m not a neutral reviewer. I’m just telling you what happens on my table and in my numbers.
Why shrimp, specifically
I’ve written before about protein being the number I ignored for months. Shrimp is the cheat code for it. It cooks in two to three minutes per side, there’s nothing to trim or debone, and a 6-ounce portion gets me into the neighborhood of 35 grams of protein for very few calories. Chicken takes longer. Fish used to scare me. Shrimp just works, even when I’m tired.
The bowl (serves 2, about 25 minutes)
Here’s exactly what goes in, because the short ingredient list is the whole point:
- 12 oz peeled shrimp
- ½ cup dry quinoa, rinsed, plus 1 cup water
- 1 tbsp olive oil
- ½ tsp ground cumin and ¼ tsp salt
- 1 cup shredded cabbage
- ½ avocado, sliced
- 2 tbsp lime juice and 2 tbsp chopped cilantro
Start the quinoa first: bring it to a boil with the water, cover, drop the heat, simmer 15 minutes, then let it rest 5. While that runs, toss the shrimp with the cumin and salt. Heat the oil over medium-high and cook the shrimp 2 to 3 minutes per side, until they’re opaque and hit 145°F. Split the quinoa, cabbage, shrimp, and avocado between two bowls and finish with lime and cilantro. That’s it. Most of the 25 minutes is quinoa sitting there while I do something else.
What it looks like in my log
When I snap a photo of the bowl in ZeroToHero (zerotoherofit.com), the estimate comes out around 450 calories and roughly 40 grams of protein per bowl. Treat those as estimates, not lab results, but the shape is what matters: high protein, moderate calories, and enough volume from the cabbage and quinoa that I’m not hunting for snacks at 9 PM.
Compare that to the Thursday delivery order I used to log, a burrito bowl that ran well over 900 calories once I counted the chips and the sour cream I’d pretended weren’t there. Same night, same tiredness, about half the calories and more protein. I didn’t gain willpower. I just removed the 7 PM decision.
Three small things that made it stick
Frozen shrimp, thawed in a bowl of cold water. Fifteen minutes while the quinoa simmers and they’re ready. No planning ahead, which is the only kind of planning I reliably do.
Pre-shredded cabbage. A bag costs a few dollars and lasts the week. It stays crunchy in a way lettuce never does, and it takes the dressing-free bowl from “dry” to “actually good.”
Don’t skip the lime. Two tablespoons is what makes this taste like a restaurant dish and not diet food. I learned that the hard way after one flat, sad attempt without it.
The bigger lesson
The meals that save me aren’t the impressive ones. They’re the ones that are easier than ordering out. If your fallback on a bad night is faster and cheaper than the app on your phone, the bad night stops being a problem. That’s really the whole system I use, and it’s why I built ZeroToHero (zerotoherofit.com) to make the logging side of it take seconds instead of minutes.
If you try the bowl, tell me what you’d swap. I’m always looking for another fast protein to rotate in.
